Tomato Zucchini Spaghetti with Avocado Sauce

A vegan dish that is both cool and creamy. It has spiralized zucchini, diced tomatoes, and a creamy avocado sauce.

Ingredients:

  • 2 medium zucchinis, spiralized

  • 2 large tomatoes, diced

  • 1 ripe avocado

  • 2 cloves garlic, minced

  • 2 tablespoons lemon juice

  • 2 tablespoons nutritional yeast

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • Fresh basil leaves, for garnish

Instructions:

In a blender, combine the avocado, minced garlic, lemon juice, nutritional yeast, olive oil, salt, and pepper


Blend until smooth to make the avocado sauce


In a large pan, heat some olive oil over medium heat


Add the diced tomatoes and cook until softened, about 5 minutes


Add the spiralized zucchini to the pan with the tomatoes


Cook for another 3-4 minutes until the zucchini is tender but still slightly crisp


Pour the avocado sauce over the zucchini and tomatoes


Stir well to coat the vegetables evenly and heat through for about 2 minutes


Remove from heat and serve immediately, garnished with fresh basil leaves

Super Cute Marshmallow Snowman on Sled

Create adorable marshmallow snowmen riding sleds using this fun and festive recipe. These sweet treats are perfect for winter parties and holiday gatherings.

Ingredients:

  • 12 large marshmallows

  • 12 small marshmallows

  • 12 mini chocolate chips

  • 6 pretzel sticks

  • 6 candy canes

  • 1/4 cup white chocolate chips

  • 1/4 cup orange candy melts

  • 1/4 cup black candy melts

  • 1/4 cup red candy melts

Instructions:

In a bowl safe for the microwave, melt the white chocolate chips until smooth


To form the body of the snowman, dip the top of each large marshmallow into the melted white chocolate


To set, put them on parchment paper


Melt the orange candy melts and make carrot-shaped noses on the small marshmallows with a toothpick


Allow them to harden and cool


Melt some white chocolate and dab it on the snowman's face to attach the little marshmallow noses


Make the snowman's eyes and buttons with the black candy melts


For accuracy, you can use a small decorating tool or a toothpick


Cut the pretzel sticks in half to make runners for the sled


Melt white chocolate and attach them to the snowman's bottom


To make the handle of the sled, place a candy cane atop the pretzel sled runners


Use more melted white chocolate to secure it


Press the mini chocolate chips into the marshmallow to form the snowman's mouth


Melt the red candy melts and draw a scarf around the snowman's neck with a toothpick


Give the marshmallow snowmen ten to fifteen minutes to solidify

Avocado Ranch Dressing

You can use this avocado ranch dressing instead of regular ranch dressing because it is vegan and gluten-free. It is creamy and tastes great. You can put it on salads, dip vegetables in it, or put it on tacos.

Ingredients:

  • 1 ripe avocado

  • 1/4 cup unsweetened almond milk

  • 2 tablespoons fresh lemon juice

  • 1 clove garlic, minced

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon dried dill

  • 1/4 teaspoon dried parsley

  • Salt and pepper to taste

Instructions:

Put the almond milk, lemon juice, garlic, onion powder, dried dill, and dried parsley in a blender or food processor and blend or process them together


To make it smooth and creamy, scrape down the sides of the bowl as needed


Add salt and pepper to taste and make changes as needed


To let the flavors blend, put the dressing in a container and put it in the fridge for at least 30 minutes before serving
